Our Story. The inspiration for BarbaCelli’s stems from chef Austin and Shannon’s two grandmothers — Barbara Dockery and Viola Paolicelli. These women represent the meaning of hospitality in its purest form. “Howdy Paisano” is an ode to them and a gesture to meld the rustic simplicity of the cuisine from Barbara’s roots in West Texas with Viola’s origins in Italy and New York. The recipes at BarbaCelli’s are inspired from what we know, good, wholesome food, and what our grandmothers taught us.
